Donimator did some deck handing this last weekend out at Westport for Ocean Sportfishing Charters on the Rock-N-Roll for halibut... He brought home some oysters, clams and of course some halibut, so we threw it on the grill...

Last night, I grilled up some of the new Johnsonville Brat Patties for me and the boys... Pretty damn good... They have the same taste as a brat, but without the snap...

Last night I did some bbq sirloin that had been rubbed w/ a little olive oil and a dry seasoning mix, and some corn soaked in sugar water, and topped it off with a little fruit salad

So, today I decided to make some Bacon Jam... Yup you read that correctly, "Bacon Jam"...

2 lbs of bacon
2 med yellow onions
4 cloves garlic
1 cup of brewed coffee
1/2 cup cider vinegar
1/2 cup maple syrup
1/2 cup brown sugar
2 teaspoons Tapatio
2 tablespoons honey

Slice up and fry bacon, remove when crisp and drain...
Sweat onion and garlic until translucent...
Set crock pot on high and everyone gets in the pool for 3-4 hours with lid off...
Let cool and hit it with the food processor until it's a chunky paste...

This will be going on some crackers with smoked cheese and on some burgers as well... I think I'll try it with some of the jalapeno jelly I made a while back...

Ok, here is the bacon jam in all its glory... It's not bad, savory and sweet... Really different, just need to figure out where it's best used...

I tried it with some cheese and crackers and the summer sausage I made for christmas...

So, after frying up all that bacon I ended up with some liquid gold(bacon grease)... It's like crisco on crack...

I thought to myself, how often do you get the chance to make homemade bacon mayonnaise???

Turned out awesome... Gonna try it on the johnsonville brat burgers...:cool:

bacon grease candle

You should put a wick in the jar and let it solidify and burn it as you would a candle, Mmmm it should smell like cooking bacon.:redneck:

so tonight I started out with a plan of making some enchiladas....

but as I started, I was sipping a PBR and decided plain enchiladas are boring and I have been there done that, so I decided to try something different... no real plan, just winging it...

Started with this stuff out on the counter...

I made a mixture of enchilada sauce, and olive oil, and tried to fry some shells in it... that didn't work at all. There is something between olive oil and enchilda sauce that does not jive. So fawk it, I stirred it together, put the shells in it, and then fried them in a separate pan! Worked fantastic.

The shells all fried up... I tried playing some online poker while cooking, that didn't work either. Fawk. I lost a million chips.

Friday I made chicken breast and bacon burgers... add some pepper jack, colby, tapatio, and some Roma tomato... and of couse some cheetos...

Made some tamales...

The maza... Course ground corn, chicken broth, lard, baking powder and salt...

The filling... Pork cooked in chicken broth and chili powder, then chopped and put back in the sauce until it reduces and becomes thick...

Smear some maza on a corn husk then add filling... Roll husk and fold over the bottom... Stack in the steamer and steam for 1-1 1/2 hours...

Mmm some tamales sound good. My father n law sent us home with a **** ton right around Christmas and it made for some good snacks:awesomework:

Beulah's Enchiladas...

Beulah was my grandma and always got enchiladas and tostadas confused, so these became known in the family as Beulah's Enchiladas...

Ok, here's the ins and outs...

Really pretty simple, but there is a key element that can't be substituted...

Basically you prep everything like you would for a taco or tostada, ground beef/chicken, refried beans, lettuce, tomato, onion, olives, cheese, sour cream, etc...

Here's what makes it a Beulah's Enchilada... Instead of using a hard tostada shell, use a soft corn tortilla(white or yellow)... Heat the tortilla in sauce pan of oil until tender, then dip it in a pan of warm enchilada sauce... I've always done a bunch of tortillas in the oil step and layer them between paper towels on a cookie sheet, then do the enchilada sauce step... Plate it and build it up with whatever fixings you like...

Finally, fry an egg and place it on top... Enjoy...

This is one of the greatest dinners from my childhood... It's still a staple in our family after 40+ years...

Try this

shred some cooked potato, mix it with a lil s&p then put small amounts in an waffle iron.
