It's because there isn't really a "gasket" kit, like you'd buy for a sbc or ford. Almost everything on them is reusable. I've never once replaced a intake gasket, timing cover gasket, rear cover gasket, ect. If it ain't leaking, don't change it lol. I've re used the water pump gaskets a hundred...

MSD coils are a joke. Stock for the win. The stock coils have been low 7's in the 1/4 @200+mph. That equates to around 2000 crank HP. So they'll work on a damn rock crawler I'd believe lol.

Yes most definately get another one and see if that fixes it. LS based computers wont go into open loop until the front O2's get to a certain temperature. Being open loop shouldnt make it run that bad tho. Actually when you go wide open the computer stops reading your O2's. It can get a little...

Just a thought...does the motor make any kind of unusual noises? You might have a few bent pushrods, not allowing the valves to open all the way. Like I said its highly unlikely thats it, but something to check if you get bored. Also a collapsed lifter can cause a misfire too.
