Last night was some bbq chicken breasts that had been marinated in some Sweet Baby Rays, and some homemade mac and cheese

Sweet Baby Rays....I used to make my own sauce until I found that stuff a few years back. Saves me all the trouble these days. My pork butts were injected with it.
 
Made carne asada with pico de gallo for dinner Friday...

Saturday started out nice so I decided to smoke a couple fatty's.I did one old school just unwrap the sausge and season it.I did the other the stuffed way,my choice of stuffing being chopped Onion and jalepeno with some shredded Chedder.

I just got the smoker up to temp and put in the meat and it started to rain.I decided to try my 12x12 ez up out for a BBQ cover and it worked great!

Today I made some Chicken Posole... For those that aren't familiar with it, it's a Mexican soup...

Basically you make a chicken and hominy soup with onion, garlic, green peppers some spices and such... Then you dressed it up when it's plated, with shredded lettuce, Roma tomato, chopped onion, sliced radish, lime wedge, slice of avocado, cilantro, dollop of sour cream and tortilla chips...

Anyone that has had it loves it... First time I had it was in '97, I watched the little old Mexican lady like a hawk the next few times she made it... Hands down, one of the best soups ever...

This thread is horrible for my diet, but maybe one of you food guru's can tell me how to cook up asparagus, without oils or butters and make it taste good :redneck:

Put wet asparagus in a bag with some seasonings of choice. Mix around till coated and then through on the grill. Grilled asparagus is the only way to go. Only takes a few minutes. If you go to long then they will become soggy:puke:

My father in law is Mexican and makes it every so often, I personally dont care for the hominy very much, it doesnt have very much flavor to me and the texture kind of throws me too. but then again im not much of a soup person either, i like me some fillling food:redneck:

I'm not a huge soup fan, but there's a few that I'm always down with... I also make a Mexican meatball soup that is off the hook... Haven't made it in a while, might be next on the list...
 
I do it the same way only I do use olive oil...

I can't have any oils or butters right now, so I figured someone would know a good way without. I will have to try it one of these days though. Not a big fan of asparagus period. Normally I'd use butter or something though.
 
Just put it on a baking sheet, hit it with some sea salt and broil it until hot. Good stuff.

My favorite is spicy pickled asparagus. :awesomework:

1 1/2" thick ribeye on the bone weighed 2lbs. There is a baked potato too but it wouldn't fit on the plate.

The boys are on spring break this week, they've been on the Xbox all day and just asked what's for dinner... So, I threw together some hamburger mac n cheese.. This ain't that boxed crap...

This is the way we do it for quick eats, sometimes we use oil sometimes not.
 
I smoked my first brisket this weekend.I picked up a 3lb hunk of flat at Walmart of all places.I rubbed it with olive oil and memphis smokehouse low and slow beef and pork rub.

When it got up to 150F I wrapped it in foil and countinued smoking it.

I made this texas "mop sauce",it turned out great and had a nice heat to it.

The finnished product turned out tender enough to easily cut with just a fork.

I'm looking forward to doing brisket again as I learned a lot this time.:beer:
 
Made a delish prime rib today for Easter dinner. High temp sear and then turn the oven off. Turned out quite well for my first prime rib. Sorry no pics.
