Well, the wife and my oldest and youngest kids are gone for the night, and it was just me and Tanner hanging out... then he decided to go to a movie with a friend and spend the night at his house... so I am home alone, and hungry... so I made some Poohbair Fajitas


Started with 1 pound of boneless skinless chicken thighs...

any time you are cooking anything with a remote spanish flavor, you have to have beer, chips, and salsa....

Let it cook until peppers are about done, then add a big can of Pinapple Tidbits... Only use Dole.. the generic pinapple sucks

This was my final product....

Burger with pepper jack, colby jack, tomato, bacon bits, and a 1/2 of a Johnsonville Brat in the middle... was fantastic

Just made a pan of baked mac and cheese... Pretty good, but I still don't have it down perfect...

Roasted a turkey breast Thursday night so me and the boys could have turkey sammiches on the trail at Elbe this weekend...

So seeing as how I'm going on deployment soon, I decided to make up some Chili to freeze so the wife could enjoy it later.

First, grill up some sausage. I use bratwurst. It's fawesome.

Cook about a pound or so of ground beef. Season to taste. I add a little of my favorite hot sauce to the beef as well.

Use some tomatoes (either 2 or 3 fresh diced tomatoes or one 14oz can). And also a can of beans. I prefer to use "ranch style" or "western/texas style" beans, but this is what I had. Bush's baked beans add a sweet flavor. It's all personal preference on the beans. Also, pour half a beer in there.

Chop up an onion and throw it in there. COAT the top with chili powder.

Add some diced garlic (I happen to have some dilled, pickled garlic). Crock that **** on low for about 4-6 hours or high for 3.

Enjoy over chips, as itself, or over eggs in the morning. :awesomework:
 
As I had more sausage ( I had partay this last weekend, and have an abundance). I decided to add a twist to an Italian recipe I like to do.

First grill up some sausage ( I usually use Italian, but I had leftover brats). Add two cups of beef stock, or as you can see here I used two cups of water and some beef bullion, to a large skillet.

Add an ass ton of Italian seasoning to the sausage (less so if using Italian sausage) and let it simmer for about 20 minutes.

As I did this ghetto fabulous, I didn't have the Farfalle pasta I wanted (bowties) and went with Rotini instead. Use some evoo and cook al dente.

After the pasta is cooked, drain and add the meat. I like to add green bell pepper strips, but can't as the wife is breastfeeding. But it does make it mighty tasty.

OK, Pooh got me thinking with his burgers...

So, I grabbed a brat out of the fridge and pulled the casing off... Then smashed it into a patty and made a brat burger... Pretty tasty...

... well, tonight was a modern day smorgasboard at the Poohbair house...


I wanted an Epic Burger... **** Burgerking.... we are talking about PoohbairKing **** here....

2 kids are watching their weight for Freestyle State this weekend for wrestling

The other kid just wanted a plain generic burger...

The wife is eating w/ the kids on a "diet"....


So I cooked a bunch of ****... with leftovers of course, cause leftovers kick ass...


For the wife and kids I started with just under 3 lbs of boneless skinless chicken.... seasoned with some pepper, ground garlic, basil, and some Mrs.Dash... this will keep them happy for a few days...

Then I cut up some sweet red taters... cause I like em... seasoned them with some garlic, pepper, italian seasoning, and basil...

Got a 1/2 pound of bacon ready to microwave... yup... microwave... it is the best way to cook bacon for a burger...

I started with a bun that I put butter, garlic, italian seasoning, and parmesean cheese on, then put it in the broiler....

I generally avoid the microwave if possible.... but micro bacon is the best on a burger....


I had some nice Potato Buns, but apparently the kids ate them, so these are what was in the cupboard, and I was a few too PBR's deep and way to hungry to go to the store for better buns :awesomework: Plus, I really am trailer trash at heart, so these were fine in the long run. The bun is really only there to hold the insides together :redneck:

I feel ya. Cheapy buns are awesome and ya don't fill up on bread. More room for meat and barley pops.:awesomework:
 
I consider my self doublewide single minded, yea i got two single wides duct taped together:redneck:. yea grub is grub grub that ****. drank a few pbrs myself on the lake tonight, while grillin wal mart frozen burgers on a 12 ft livingston. maybe ill bring the honda generator and a microwave next time and cook some bacon.
 
you have to have some tacos for Cinco De Mayo... right? These are ground turkey units (the best for tacos) loaded in a toasted hard shell with hot sauce, salsa, and Colby Jack cheese... with some nachos on the side...


And of course the RED WHITE AND BLUE!!!

Add crushed tomatoes, paste and sauce... Then the seasonings, fennel seed, italian parsley, oregano, basil, italian seasoning, salt, black pepper and a little sugar...

Mix together ricotta, an egg, nutmeg and italian parsley...

Start to layer everything... I used a noodle that you don't have to boil, it worked pretty good... Meat sauce, noodle, ricotta, mozzarella, parmesan... Repeat... 3rd layer is meat sauce, noodle, meat sauce, cheddar, mozzarella...

Bake at 350 covered with foil 30 min... Then uncover and cook 20 min... Turn on boiler and cook 5 min or until top is browned...

Well, we are a house that loves leftovers... so tonight for mommy day i did 5 lbs of boneless skinless chicken thighs that have been marinading in bbq sause and seasoning for about 5 hours... did some grilled zucchini for the wife.... some green beans for me and the kids, and some cheesy noodles and toast.... was great, and there is a metric **** tone of leftovers :D
