What is the difference between standard and undercut stud bolts for a head?

I am looking to rebuild my old 2.0L in the dub (in preparation for some fun...:stirpot: ) And there is a choice between undercut had bolt studs or standard? is there an advantage to one for the other? Or is it just a preference?
