I bought the girlfriend a cheap dehydrator from Harbor Freight today and need some recipes for making beef jerky. Who's done it, how did it turn out, and whats YOUR secret recipe?
 
Can i be your taste tester??? lol we made some years ago and i forgot how we did it...id say try it out till you get it right so you hve your own secret recipe :awesomework:
 
start by throwin some fairly thin pieces in some kind of marinade for a night then put em in the dehydrator.

personally, i like using the masterpiece chipoltle lime stuff.

Edit: For mo betta jerky, use a smoker:awesomework:
 
we always made simple mixes..
soy sauce works good, let it sit overnight.

did another with pepper. not sure if it was just in water or what:eeek:
they always turned out good tho:D

weve made it both ways. i prefer dried over smoked.

also, smoked wont last as long as dried....

haha, this is true.

the first batch to get done, would be half eaten, before we were done hanging the 2nd batch:redneck:

Use flank steak and make sure to cut it with the grain. Most marinade recipes are pretty simple.

Here what I have used. I adjust it from time to time. Got it with my smoker.

1/3 cup Sugar
1/4 cup NON-IODIZED Salt
2 cups Soy Sauce
1 cup Water
1 cup Red Wine
1/2 tsp Onion Powder
1/2 tsp Pepper
1/2 tsp Garlic Powder
1/2 tsp Tabasco Sauce
 
Sounds like some trial and error is in my future. As soon as the GF get the nasty bananas out of it, I'll throw in some BEEF and let ya know how it turns out! I also was told to try some liquid smoke?:beer:
 
If you cut across the grain it gets crumbly. Do you have a hard time eating jerky in the bag? It's all cut with the grain.
yeh, i like it crumbly. maybe angled across the grain would be good?

yeh, sometimes the bagged stuff is too stringy, and hard to eat. gets stuck between teeth also.

I have used yoshidas teriyaki sauce with alot of cayene pepper, then just some a little pepper and some lemon juice.

The only thing about the yoshidas is that it makes the meat al ittle oily even after its been smoked, but it sure does taste good.

If you also have like one of those vacuum pack machines, those work good to pull the marinade into the meat:awesomework: Thats how Stewarts meat in Mckenna does it, they pull it under a vacuum.
 
High Mountain make a good jerky brine. They have a sample pack that has 5 differencr flavors in it (makes 5 lbs each). You can find them at Warehouse sports, Cabelas and Sportco.

You can also mix yur brine with burger meat and put it through a "Jerkey Shooter", they wrok well for burger meat.

I have made jerkey all ways possilble and the smokers turns out the best flavor. You just need to learn to controll the heat, start at 130degrees and increase the heat after 2 hours to 155 degrees.

i have a smoke house we got drunk and made its huge and versitle i smoke fish jerky cheese hard boild eggs patatos chickin racks of ribs .it will smoke a whole hog .:awesomework:
