Sorry for no "in progress" pics.

Buffalo meat tacos. Topped with re-fried beans, sliced avocados, sliced raw mushrooms, red onions, sharp cheddar cheese, a dab of sour cream and a little bit of salsa.

A (approximate) 20 dollar meal that'll feed 1 1/2 - 2 people very well.

Stupid shells are never big enough!

Made some onion fritters, just experimenting a bit...

Carne Asada with fresh homemade Pico De Gallo and Chorizo...


I add avocado to my pico de gallo... Tomatoes, onion, jalapeno, cilantro, lime juice, salt and pepper...

Chorizo is from the mexican carniceria... Good luck finding any better from the grocery store...

Carne Asada is taditionally made from a cut called a flap steak... Pretty hard to find except for at the carniceria... It's real similar to a flank or skirt, but a lot more tender... It marinaded in a Mexican marinade called Mojo... If you go to the butcher counter at any of the carnicerias, you're looking for a cut called ranchera and they will prepare it for you with the magic juice... Throw it on the grill...

White corn tortillas, chorizo, shredded carne asada, pico de gallo, shredded cheddar, sour cream and a little tapatio... The trick with tortillas is to warm them on the grill, then put them in the styrofoam tortilla warmer and let them steam themselves... That make them really tender...

My wife makes that spanish **** all the time she's from PARAGUA with mad cooking skills iam getting hungry know,ill go yell at her.:beer:
 
Care to share a recipe of some sort? Or more info on what you did atleast, I'd like to try something like that.


Batter...

1 egg, cup of pancake batter, cup of all purpose flour, add water until it's about the constancy you would want for pancakes... Then salt and pepper...

Slice up two onions pretty thin and mix into the batter... Then deep fry for about 4-5 minutes per side...


Couple tips, you can use quite a bit of pepper to season because the batter can really take it... Also don't overcrowd your pan... These were pretty good with mayo/ketchup secret sauce...

So, I'll get out of Boonie's thread and post up what I cooked today on the Hobo Stove...

Actually I made a new one out of some of the kids apple juice cans... Worked great... Just as good as the one that hard boiled the egg...

Then I threw on a 6oz. tenderloin... A little salt and pepper and cooked it for 4 minutes per side...

Here's a tip for you, finish it off with some butter... You'll notice that familiar flavor that you get from a really great steak at a Steakhouse... It turned out perfect, one of the best steaks I've ever eaten...:cool:

About 2.5 lbs of venison, and 3 lbs of elk meat all cut up, de-fatted, and sitting in the refer in the cure for some jerky... should be ready to smoke Christmas morning right after presents!!!

Last time I just tried a homemade wet brine mix.. wasn't that great, so this time I tried a dry cure / seasoning mix. Spread over meat, then mix in a bowl, the throw in a baggie for 24-30 hours prior to smoking...

i make my own everytime deer, bear etc... lots of yoshida yaki sauce, worsteschire, franks red hot, cumin, garlic (in mass quantities), oregano, a little sweet baby rays, pepper, some italian dressing, red pepper, dash or six of soy sauce, and some brown sugar. ztir the **** up put the meat in let it cure for 48hrs in the fridge. dont ask me for increments just eyeball the **** it will turn out great!

And this morning I fried up some eggs and had them with a few tamales... Oh yeah, used my new marble skillet...

Sautee 6 chopped onions and 4 cloves of minced garlic.

Add to:

6 pounds boiled/chopped chicken
3 cans garbanzo beans(drained/washed)
6 cans canelloni beans(drained/washed)
6 chopped chili's
1/2 teaspoon salt
1 teasspoon cayenne(maybee add more)
1 teaspoon cummin(maybee add more)
96 or so oz of chicken broth
Bunch of cilantro

slow cook for 8 hours or so. Still working on perfection but its pretty good for a wag recipe.

A few years back we took a trip to the Sand Lake Dunes & on our way home we decided to take a different route because there was mass construction going on & there was super long delays. The road we took brought us out to the middle of nowhere & took forever because of all the sharp corners throughout the mountains. About half way between highway 101 & highway 26 we seen signs for a small town coming up in about 5 miles, by that time we were starving and ready to stop for something to eat.

About two miles before we get to this town there were a bunch of signs showing different types of Jerkys so we were like sweet! well the last sign we see as we were coming up to the town said something like "Jerky ahead @ The Road Kill Cafe", after seeing this sign the jerky didnt sound too pleasant but we were so hungry we had to stop.

The small town was basically just an old gas station that was shut down & this guy had a little stand setup outside the old gas station with a bunch of little containers that had just about every type of jerky you could think of. He had Beef, Bison, Moose, Elk, Deer, Salmon, trout, & a bunch of different types, this ended up being the BEST Jerky I've ever had, better than any meat shop I have ever been to. Each type of meat he had in different flavors like teriyaki, spicy, etc. His prices were a little high but we ended up buying a bunch to take home because it was that good.

I wish I would have kept the label because he had a website that you could order from:mad:

Last night we were out and about and didn't cook.. but tonight we had some friends and their kids over...

We rocked 2.5 pounds of shrimp
A 2.25 pound London Broil
2 Red Peppers
1 Onion
4 Small Zuchini
2 Loafs of Garlic Bread
1 large batch of white rice

plus a bunch of chips, salsa, veggie trays, bbq sauce weinies, etc...


Then we played some Pinochle.... it is hard to find people that know how to play!!!

Yeah... I finally broke the new grill in all proper like and ****!

Now I just need to get the rotisserie to make it complete :D
