So I have been looking but not sure if I am even using the correct terms.

So I want to go from a 3/8" hardline to a 3/8" barb fitting. I can do it with 3 adapters (3/8 hardline to 3/8npt to3/8 npt union to 3/8 npt to 3/8 barb)

I could have sworn I have seen a single fitting to do the same thing..

You could do it with two fittings by losing the union, use a female npt barb. I've also seen a barb with a -6 male on the end of it for a one fitting setup. It would only require a flare and a nut.
 
I have a couple brass push lock with 3/8 inverted female flare on the other end. Simple way to go with just a flare and nut on the steel line.
 
Get a brass fitting that is 3/8ths barbed and just male pipe thread.

Pick the size of pipe threrad that has an inside diameter of 3/8ths.

Slide the hardline in and silversolder it up.

NO adapter or fitting then, just one piece.
