So this morning I threw about a 5 lb pork butt roast in the crock pot.... let it slow cook all day with some special Poohbair seasoning...

Took it out tonight after it had been cooking about 12 hours...

... and you HALF TO HAVE some chips and salsa from El Caporal... costs 9 bucks for chips and salsa, but it is worth every penny....

Tonight was deepfry testing night at the Poohbair house...

I have owned the deepfryer for about 6 years and I think used it 1 time... so tonight me and TJ decided to do some testing...

I got 3 gallons of peanut oil, and TJ brought over a 4.6 pound prime rib... been seasoning in a nice dry rub all day long...

So in my hillbilly mind, a deep fried potato should be like a baked potato... right? So we decided to do some testing....

First 2 taters cooked at 450 for about 10 minutes... not the best... still not cooked in the middle, and burnt on the outside....

So we turned the heat down... waited 45 minutes for the oil to cool down to teh 350 range... and then found some other stuff to deep fry just because, why not... :D

so then we put the meat and taters in the basket, and dunked them in w/ the oil at 350....

I stuck the Brat and the biscuts on kabob sticks... but then at the end I used the stick for the Brat, and just let the biscutes float...

At first glance, we thought the Brat was fawked... looked like it was WAY overcooked....

The meat got a touch overdone.... should have been pulled maybe 5 mins earlier...

The biscutes ended up looking like little donuts from the hole in the middle, but the tasted FANTASTIC!!!

The potatoes were AMAZING.. crisp on the outside, hot and like a baked potato on the inside...

We've been doing the biscuits like that since I was a little kid... Drop them in a bowl full of cinnamon and sugar right out of the oil... Holy ****, they're off the hook...:cheer:

For the taters, I buck them up into thick rounds and fry 'em... Then dip them in some mayo/ketchup special sauce... Will not disapoint...:cool:
 
It was time for some pork on pork action.Started with a pound of pepper bacon......

The wind was blowing WAY too hard to use the smoker so it went in the oven.

Some Yummy Fresh Cinnamon Rolls!

I decided to make some cinnamon rolls...

The pictures are not the best, taken with the cell phone...

anyway...

Dough all filled with cinnamon and goodies all rolled up...

I let them marinade until about 6pm tonight..

Was running low on propane, so I threw them in the oven. Baked them for about an hour and 20 mins... flipping the occasionally. I ended up switching pans so that they could get a little better "crisp" to them...

For tonight, I had wings, and leftover rice and teriyaki chicken from last night, along with some fresh pinapple...

I am at my brothers in Montana for my nieces' graduation party...

Will get more pics of this tomorrow after it smokes for about 12 hours...

It is rubbed on the inside with seasoning, stuffed with chicken legs, wings, and thighs and then stiched back together with wire.

The weather turned out ok today so I decide to cook a 2.25 pound boneless pork shoulder we had.I rubbed it with these this time.

Beef enchiladas is what I cooked tonight. In my family we make them this way and we love them.

The ingredients.

I boil all my hamburger in water to brown it up that way there is less grease in the meat. Oil warming up for the shells

I line the baking pans with 2 cans of chili I put 1/2 a can of enchilada sauce in the meat and cook the meat some more. Wife and daughter to like spicy thing so I leave the onion and chili's out of the meat mixture.

I put a some meat and cheese in each shell and roll them up.

Load both pans with seam side down pour rest of the enchilada sauce over them and sprinkle with cheese.

I bake it for 20 minutes with some crispy crowns at 450 deg.

Messed around with the dutch oven by the campfire...

Made some Monkey Bread... Canned biscuits cut into 1/4, tossed in sugar and cinnamon and chopped up butter...

Did a chocolate fondue in my little 2 cup cast iron... We dipped apples, strawberries, bananas, whole smores and whatever else we thought would taste good... After the kids went to bed we poured some whiskey in it and added more chocolate bars... This was a huge hit at camp, I'm gonna pick up a couple more and do a cheese dip and a carmel dip...

Sunday I did a pork pot roast that took about 6 hours... It got some love from some onions, garlic, red taters and baby carrots...

BACON LOG, or BACON EXPLOSION. whatever you wanna call it. I made this not too long ago, if you want left overs dont tell your friends about it! lol

4lb's of bacon, - get the thick stuff with the least amount of fat on it.
2 pounds of pork sausage
1 -2 pounds of ground beef
1-2 pounds of any thin cut steak
Jalapenos - optional
cheese - optional

fry up 1 lb of bacon to crisp then chop it into tiny pieces
use the other 3 pounds to make a basket weave out of the bacon, this takes a little bit of practice.
chop up jalapeno's and mix together the ground beef and ground pork, and spread it over the bacon weave, season it with your favorite seasoning - i just used some johnys.

take your thin sliced steak, and spread it out evenly ontop of the ground pork/beef

then take some shredded cheddar cheese and spread it evenly ontop of the steak.

finally top it all off with your fried up bacon pieces.

roll it tight into a log, and put it in your smoker, or you can broil it in the oven.

if you do it in the oven make sure you put it on a raised rack over a metal pan that will catch all the grease dripping off the log - there will be alot!!!!

That bacon log is gettin did next camping trip! Made my bacon and sausage biscuits and gravy at wheeling camp this weekend, fawkers were licking the bowl.... And my bacon bacon bacon potatoe salad..... gotta finger out how to post pics.
 
Memorial Day was a good day for pork. I brined this 8lb pork shoulder butt overnight (molasses, salt, water). Then Monday morning I gave it a dry rub...



...and threw it on the Weber to smoke for 4 hours...



Smoking on the Weber takes a lot of baby sitting, so I pulled it out at 4 hours and planned to finish it the Crock Pot. It was looking sufficiently smokey at that point...



It was in the Crock for another 3.5 hours, I probably would have done less but I was off watching Kung Fu Panda 2 with the kids. Looks good enough to eat...



One good thing about using the Crock Pot - ended up with plenty of liquid so I made a tangy sauce (drippings, cider vinegar, ketchup, pepper) for our sandwiches. :awesomework:
