The reason you can't watch them is that most of them are using flash. It is possible to get a flash emulator or to use a browser that supports a bootlegged flash program that works with IPad, but flash is so memory intensive, it will eat your battery and at times it can even make a very stable iPad want to lock up.

If your on an iPad, scroll to the bottom of the page and select the mobile version of YouTube. That should let you watch the any video.
