I'm putting on a new truss on my cucv 60 just wondering what's the best pinion angle to set it up without affecting steering

Unless you're turning the knuckles it won't matter. Set the caster first. Depending on type of truss, they only roll so far forward or backward

set it at ride height, put an angle finder on the pinion yoke measure 7.5-8.5* and rock out.
 
Does this make much difference for a trail only buggy? I know the castor will affect how a vehicle runs down the road but is it noticeable on the trails with full hydro steering?

Yes. Mine is setup with 0 castor due to link lengths and pinion angle. My 2pc shaft is steep. When turning the tires turn into the ground instead of up.
Ideally the knuckles need to be turned to set pinion angle for the rig and castor for good/proper steering
