Air in cooling system

This is something I've never had a problem with before but it seems like I can't get all the air bled out of my cooling system, mabey I'm doing something wrong. Fill up radiator, run engine till t-stat opens, top off until full, rev engine and close cap with rpms, then let off throttle. But it still seems like there's air in there because the t-stat won't open till its really hot then just before the gauge goes in the red the stat opens and temp drops. Is there some trick to get this pesky air out of there, or might it be something else entirely?
 
I replaced the thermostat, also tried running without one, things circulated real good. What about parking pointing uphill to get air out the cap, does that work? The temp gauge seems to work. I was also wondering if there was mabey a temp sensor of any kind other than the sending unit on the t-stat housing? It's a 2.5L in a 94 YJ.
